This pie has the perfect amount of sweet and tart plus it’s soo easy to make. It uses Crofter's Organic apricot spread and honey crisp apples for the filling, resulting in a delicious dessert that will make you want to go for seconds and even thirds. Crofter's spreads are Non-GMO, lower in sugar, vegan and gluten-free.

What you need

brown rice flour

½ cup brown rice flour

ground cinnamon

½ tsp ground cinnamon

vanilla extract

½ tsp vanilla extract

coconut sugar

½ cup coconut sugar

lemon juice

1 tbsp lemon juice

orange peel

½ tsp orange peel

apricot jam

1 fl oz apricot jam

almond extract

⅛ tsp almond extract

unsalted butter

⅓ cup unsalted butter

honey crisp apples

3 ½ cup honey crisp apples

walnut pieces

2 tbsp walnut pieces

irish oats

¾ cup irish oats

Instructions

In a medium bowl, mix the sliced apples, lemon juice, grated orange peel, almond extract, vanilla extract, and cinnamon. Place the mixed apple ingredients into a greased 8-inch pan. Layer the apple mixture with 1 jar of Crofter's Organic apricot jam. In a separate bowl, hand mix thoroughly the oats, coconut sugar, brown rice flour, room temperature butter, and crushed walnuts until the mixture is crumbly. Transfer this crumbly mixture evenly over the jam layer. Bake at 350F for 30 minutes.
