15 mins prepServes 4
Yuca is the root of the Cassava plant. It is an excellent source of complex carbs, it’s high in calcium and vitamin C and it’s SUPER delicious! Find it in the refrigerated section along with other veggies at your grocery store!
For the Baked Yuca Fries:
1. Peel 2 large yuca roots and cut into desired shapes.
2. Rinse yuca (cassava) and place in a pot with boiling salted water.
3. Boil on medium heat until tender (approximately 10 minutes). Do not overcook—it will be mushy.
4. Drain and pat dry the cooked cassava.
5. Line a baking sheet with parchment paper and place the cassava in a single layer.
6. Coat with coconut oil, sprinkle with salt, garlic powder, and a dash of black pepper.
7. Bake at 400F for 20-25 minutes or until slightly brown, flipping halfway through.
For the Yogurt Ranch Dressing:
1. In a bowl, combine 1/2 cup Siggi’s yogurt, 1 clove of minced garlic, 1 tablespoon brown mustard, 1/4 teaspoon black pepper, 1/2 teaspoon paprika, dill weed, fresh chopped parsley, and fresh chopped chives.
2. Mix well.
Serve warm yuca fries with the homemade ranch dressing. The dressing is good for 5 days in the fridge.
