Prepare the Shrimp:
Pat shrimp dry with a paper towel.
In a bowl, combine shrimp with olive oil, toss well, then season with smoked paprika, paprika, garlic powder, black pepper, and salt. Mix well until evenly coated.
Let the shrimp marinate for 30 minutes for extra flavor.
Cook the Shrimp:
Heat a pan over medium-high heat and add a drizzle of olive oil.
Once the pan is hot, add the marinated shrimp. Cook for 1.5 to 2 minutes on each side, being quick to flip. Avoid overcooking to keep the shrimp juicy. Set aside when done.
Sauté the Veggies:
In a separate pan, heat a little olive oil over medium heat. Turn the heat down to medium-low, add the chopped onion and cook for about 10 minutes, stirring occasionally, until soft and golden.
Add the sliced bell pepper, season with salt, pepper, and a dash of garlic powder, and continue sautéing until softened and cooked through.
Cook 2 cups of white rice according to the package or in a rice cooker. Once done, fluff with a fork. Assemble the bowls, garnish with fresh parsley and scallions and enjoy!
