Festive Potato Mushroom Bake

Preheat the oven to 350°F. Wash potatoes and mushrooms thoroughly. Pat the mushrooms dry with a paper towel. Add the potatoes to a boiling water. Boil for about 20 minutes; then cool, peel, and thinly slice. Mix crème fraîche with water and pressed garlic in a small bowl. Drizzle olive oil in a large baking dish and layer ingredients: mushrooms, potatoes, butter, crème fraîche with garlic, parmesan, salt + pepper, and repeat. Ensure not to oversalt due to the salty parmesan. The final layer should be potatoes; drizzle with crème fraîche, add butter chunks, and sprinkle with parmesan and garlic powder + pepper + salt. Cover with foil and bake for 40-45 minutes. Remove foil and broil for 5 minutes until golden brown. Allow it to sit for 15 minutes, then sprinkle with fresh parsley or dill. Enjoy!
