FLUFFY APPLE PIE PANCAKES! recipe inspired by my lovely mama who used to make us apple pancakes while growing up ❤️these pancakes are fluffy, almost pillowy and so incredibly tasty! I used @siggisdairy yogurt which helps make the pancakes fluffier and gives them extra protein! 💯

Instructions

First, mix the almond milk, yogurt, and maple syrup. Then add the dry ingredients: oat flour, baking powder, a pinch of salt, flax meal, and cinnamon. Mix well and let the batter rest for 10 minutes. Chop or shred half of an apple and add it to the batter, mixing well. Preheat your pan to medium heat and coat it with coconut oil. Cook pancakes for 2-3 minutes on each side, covered with a lid. Serve topped with sautéed maple syrup apples, Siggi's yogurt, maple syrup, peanut butter for dipping, and sprinkled with lots of cinnamon.
