In a bowl combine the yogurt, raw egg, baking soda, salt and pepper. Mix until well combined. Chop up a boiled egg and add it to the mixture along with scallions & parsley. Add in the flour and mix until well combined. Preheat a pan to medium heat, add Olive Oil from Spain and cook pancakes for 3-4 minutes on each side with the lid on. Paired with greek yogurt drizzled with Spanish Olive Oil and za’atar. ENJOY!
