These turkey patties are a family-inspired recipe, taking a cue from a grandfather's method of adding boiled mashed potatoes to ground meat for extra delicate, juicy, and delicious results. This version is also gluten-free.
For the mashed potatoes: Peel the potatoes and place them in boiling water seasoned with salt, garlic powder, and 1 tbsp of olive oil. Boil the potatoes for approximately 15 minutes, then drain. Add butter and parmesan, then mash with a potato masher.
For the patties: Preheat oven to 400F. Combine all the patty ingredients (ground turkey, chopped parsley, egg, feta cheese, mashed potatoes, onion, paprika, black pepper, oregano, garlic powder, coriander, and salt). Wet your hands and form the mixture into patties. Add 1-2 tbsp olive oil to a pan. Cook the patties over medium heat for 4 minutes on each side. Transfer the cooked patties to a baking tray covered with parchment paper and bake for 5 minutes. Always check your meat with a meat thermometer; the internal temperature should be 165F.
