Grilled Pineapple Yogurt Bowl

1. Begin by cutting off the top and bottom of the pineapple using a sharp knife.
2. Stand the pineapple upright on one of the cut ends and carefully slice downward, following the curve of the fruit, to remove the outer skin in sections.
3. Make sure to cut deep enough to remove the “eyes” (the small brown spots) that are scattered across the pineapple’s surface.
4. Once the skin is removed, lay the pineapple on its side and cut it into desired slices. You can make the slices as thick or thin as you prefer.
5. Sprinkle cinnamon over the pineapple slices, then drizzle them with honey.
6. Heat a grill pan over medium heat.
7. Add olive or coconut oil to the pan (optional).
8. Place the pineapple slices in the pan in a single layer.
9. Cook for about 2-3 minutes on each side, or until the pineapple develops a golden-brown caramelized color.
10. Once they’re nicely browned, they’re ready to be enjoyed!
11. Add yogurt to a bowl – I used plain whole milk – then add the grilled pineapple, sprinkle with pistachios, and drizzle with honey. Enjoy!
