10 mins prepServes 2
This recipe features Banza pasta for a quick, protein- and fiber-packed meal. It's an easy way to make dinner feel nourishing while still coming together fast, with one serving of Banza providing 8g of fiber and 20g of protein.
Bring a pot (8 cups of water) to a boil, add salt, then pasta, and stir. Reduce the heat to a simmer, stirring frequently, and cook for the recommended time or until al dente (about 6 minutes) expecting some foaming. Once done, drain the pasta and rinse it with cold water to remove the foam. Set aside. In a pan over medium-high heat, add the butter and olive oil. Add in garlic and sauté for a couple of minutes. Pour in the heavy cream and stir in the Parmesan cheese, lemon juice, salt, and pepper to taste. Let the mixture simmer and thicken for about 3–5 minutes. Add the cooked pasta to the pan and toss everything together. For a creamier sauce, gradually add the broth, a little at a time. Finish with extra Parmesan, salt, and pepper to taste. Add in crispy chickpeas and garnish with parsley.
