This recipe has to be one of my favorites that I’ve made. It’s incredibly fresh, bursting with flavor, and absolutely delicious. The combination of shrimp, mango, and basil creates a refreshing and flavorful dish that I can’t wait for you to try!
To prep the mango salsa, chop all the ingredients, season with salt and pepper, and add freshly squeezed lime juice.
To prep the shrimp: pat dry your shrimp with a paper towel until completely dry. Drizzle with olive oil and season with all the spices listed in the ingredients. Mix well and let marinate for 30 minutes. I prefer to prep this overnight, but if you’re short on time, 30 minutes will do.
Coat your pan with olive oil and preheat to medium-high temperature. Add shrimp and cook for 1.5-2 minutes per side. Be quick and prepared to flip it :) Don’t cook it longer; it’s juiciest and best when cooked properly.
I used Siete almond flour tortillas. Warm up your tortillas; I like to heat them over an open flame for a few seconds on each side. Then, add mango salsa, shrimp, and jalapeño sauce on top.
