Instructions

Preheat oven to 375F. Grease a baking pan with butter and set aside. Separate egg whites from egg yolks and set that aside too. Using a hand mixer, mix together butter with 1/3 c of coconut sugar until the color becomes light. Add egg yolks one at a time. Once the eggs are appropriately emulsified, incorporate dry ingredients, then add juice & zest of Sumo Citrus. Next, whisk together the egg whites, the remaining 1/3 c coconut sugar & combine with the batter. Transfer the batter into the baking pan and bake for 30 minutes. Let it cool for 10-15 minutes, poke it with a fork and pour over the glaze. For the glaze: add coconut sugar to the pot and Sumo Citrus and bring to boil. ENJOY! ♥️♥️♥️
