Smokey Chickpea & Arugula Pizza

To make the pizza, first heat the oven to 400F. Bake the CAULIPOWER three cheese cauliflower pizza crust for 11 minutes in the oven according to package directions.

While the crust bakes, prepare the smokey chickpeas: Rinse and drain a can of chickpeas thoroughly under cold water. Pat the chickpeas very dry with a clean dish towel or paper towels, removing any chickpea skins that come off while drying. In a bowl, toss the chickpeas with 1-2 tbsp olive oil, 1/2 tsp smoked paprika, 1/2 tsp curry powder, 1/2 tsp garlic powder, and 1/4 tsp pink salt, ensuring they are coated evenly. Bake the chickpeas for 25-30 minutes, tossing halfway through. After baking, sprinkle the chickpeas with more smoked paprika and toss well.

Once the crust is baked, top it with the roasted smokey chickpeas, roasted corn, arugula (massaged with a little olive oil), hemp seeds, and a sprinkle of shredded parmesan cheese.
