Sweet & Gooey Peanut Butter and Banana Chocolate Chip Quesadillas

Warm up almond flour tortillas (you can use whole wheat or gluten-free tortillas if you don’t have these). Spread each tortilla with peanut butter. Place very thinly sliced bananas on top of peanut butter over half of each tortilla (if the bananas are too thick the quesadilla will not be gooey and will not hold together). Add some chocolate chips on top of banana slices. Fold over the filled side and cook the quesadilla in a skillet lightly greased with coconut oil over medium-low heat until golden brown (cook for about 3-4 minutes on each side). Cut the quesadilla and enjoy!
