Sweet Potato and Apple Latkes

Shred one medium-sized sweet potato and one medium sized apple using a grader. Squeeze out the juice out of the apple using your hands. In a separate bowl whisk 2 eggs, add salt, cinnamon and sugar and combine with sweet potato and apple mixture. Add almond flour and mix well. Heat avocado oil in a cast iron skillet over moderately high heat until hot but not smoking. Scoop about 1/4 c potato mixture per latke into oil and flatten to 3-4 inch diameter with a slotted spatula. Reduce heat to medium heat and cook until golden, about 4 minutes on each side. Then cover with a lid and cook for another 4-5 minutes AT THE REDUCED HEAT. Transfer latkes with spatula to paper towels to drain. Enjoy with yogurt, peanut butter and cinnamon bananas.
