Sweet Potato Latkes

Shred one medium-sized sweet potato using a grader. In a separate bowl whisk 2 eggs, season with salt and pepper to taste and add the mixture to the bowl with the shredded sweet potato. Mix well. Heat avocado oil in a cast iron skillet over moderately high heat until hot but not smoking. Scoop about 1/4 cup potato mixture per latke into the oil and flatten to 3-4 inch diameter with a slotted spatula. Reduce heat to medium and cook until golden, about 2 minutes on each side. Then cover with a lid and cook for another 2-3 minutes at the reduced heat. Transfer latkes with a spatula to paper towels to drain. Enjoy!
