Turkey Pesto Meatballs

Homemade Pesto Directions: Add basil, pine nuts, Parmesan cheese, garlic, lemon juice, salt, and pepper to a food processor. Pulse until everything is finely chopped. Slowly add in the olive oil until smooth and creamy. Taste and adjust seasoning as needed (more lemon, salt, pepper, or cheese).

Turkey Pesto Meatballs Directions: Preheat oven to 400°F (200°C). In a bowl, mix 3/4 cup of the homemade (or store-bought) pesto, panko bread crumbs, egg, salt, pepper, and red pepper flakes until the panko is moistened. Add the ground turkey and 1/2 cup Parmesan cheese, then mix gently until just combined. Form the mixture into meatballs and place them on a baking sheet. Bake for 10 minutes, then rest for 5 minutes. Coat with extra pesto before serving and enjoy! Tip: If you don't have panko, soak 1–2 slices of bread in milk and use that instead. You can also pan-fry the meatballs in a little oil until golden brown.
